New kid approved muffin recipe! I had a recipe but not the exact ingredients…plus I wanted zucchini and carrot in there. This is what I came up with and they were a hit! Next time I’m going to add in 1/2C of hemp hearts for a protein boost!
Makes 24

3 mashed bananas
1 small zucchini
1C carrots
4T ground flax
8T water
1C unsweetened coconut milk
1/4C honey
1T vanilla
1/4C melted coconut oil

3C sprouted spelt flour
2C rolled oats
2t baking powder
1t baking soda
1t cinnamon
Pinch of salt

Preheat oven to 400F

In a large bowl mash bananas. In a high powered blender or magic bullet purée the carrots & zucchini with the coconut milk. Pour into bananas & mix in honey, vanilla, flax & water. Mix in the melted coconut oil.

In a separate bowl mix together the remaining dry ingredients. Combine & scoop into greased muffin tins (I use coconut oil spray). Bake for 20 minutes and allow to cool slightly in the pan before removing. Enjoy!
