Simple summer supper idea for you! This was inspired by a DELICIOUS meal made by a friend. I hope you enjoy it!
I seasoned the Tilapia with chili powder, garlic powder & pink salt and then grilled it on the BBQ IN our grilling basket (best investment ever BTW).
Served on top of the Succotash:
1/2 red onion, minced
2 cloves garlic, minced
2 zucchini, chopped
1 red pepper, chopped
1C frozen corn, thawed
1C frozen kale
4T fresh basil chopped
In the order listed chop & sauté the veggies in a non stick pan with 1T olive oil. Season with pink salt to taste.
Made 4 servings (approx 1C each)
