I created these little balls of Turkey heaven last week and quite enjoyed the leftovers (big batch recipe of course!)
They have Sundried tomatoes, spinach, and goat feta all wrapped up in one delicious meatball! Bonus? They got a thumbs up 👍🏻 from all 4 Goerzen’s!
Here’s how I made them:
2 (1ish)pound flats of ground turkey1/2 onion, minced2 gloves of garlic, minced1/2C Goat Feta (cows milk would be fine)2C Spinach leaves, chopped1/2C sundried tomatoes in oil, drained well2 eggsS&P1T dried basil (if you have fresh – 1 handful chopped would be lovely)
I found these a bit “sloppy” to form. If you have TIME (ha ha, I know) I’d recommend popping the mixture in the fridge to firm it up a bit for rolling OR you could add 1/3C of bread crumbs if you wish!
I rolled placed on an oiled broiling rack. (so they could drain off). I baked at 450F for about 15 minutes or until they were well cooked and a little browned.
You could also easily pop this in a loaf pan. You’d just need to increase the baking time based on the size of loaf (if you split it in 2 loafs I’d guestimate about 45 minutes.
