There is nothing like a good chewy oatmeal cookie with a cup of tea in the evening (at least in my books)…but I also want to make sure I know what I’m putting into my body. Enter this health-i-fied cookie recipe.
Wet ingredients:
- 2 mashed bananas
- 1/2 cup of super butter (seed butter)
- 1/4C coconut oil, soft
- 1/2C coconut sugar
- 1T vanilla
Dry ingredients:
- 2C oats, ground (I used my bullet)
- 1C unsweetened coconut flakes
- 1t baking soda
- 2C rolled oats
- 1T chia seeds
- 2T ground flax
- 1/2C raisins
- 1/4C mini chocolate chips
Preheat the oven to 400F. Mix the wet ingredients. Add in dry ingredients. Mix well. Portion out into 1T dollops on your baking tray. Bake for 10-12minutes or until they are firm to touch. Let cool. Enjoy!
