I love this simple salad as a meal prep item (lunches done!) OR as a potluck or BBQ salad. Simple, delicious and a crowd fave!

  • 1C dry quinoa cooked and cooled
  • 3/4C frozen corn
  • 1 can of black beans, rinsed
  • 1C grape tomatoes halved
  • 3/4C frozen kale (fresh if you have it)

Dressing:

  • Juice of 1-2 lemons
  • 2T olive oil
  • 1-2T Apple cider vinegar
  • Pink salt & pepper to taste
  • 1-2t chili powder
  • 1/2t garlic powder

Mix & marinate. As the frozen items defrost it will just develop in flavour!

Garnish with slices of avocado.
