I love this simple salad as a meal prep item (lunches done!) OR as a potluck or BBQ salad. Simple, delicious and a crowd fave!
- 1C dry quinoa cooked and cooled
- 3/4C frozen corn
- 1 can of black beans, rinsed
- 1C grape tomatoes halved
- 3/4C frozen kale (fresh if you have it)
Dressing:
- Juice of 1-2 lemons
- 2T olive oil
- 1-2T Apple cider vinegar
- Pink salt & pepper to taste
- 1-2t chili powder
- 1/2t garlic powder
Mix & marinate. As the frozen items defrost it will just develop in flavour!
Garnish with slices of avocado.
