I came up with this recipe like most. I was craving lettuce wraps…but traditional wraps with hoisin can be a bit high in refined sugars. Time to get creative. This got a 4-thumbs up from the Goerzen clan!

Ground turkey (1 flat)
1/2 onion, minced
1 clove of garlic, minced
2T fresh ginger, minced
1/2 red pepper, chopped fine
1C matchstick carrots
3 green onions, chopped
2T sesame oil
2T maple syrup
2T Bragg All Purpose Seasoning (natural soy sauce – in the natural foods aisle)
1T rice wine vinegar
1 head of iceberg lettuce

In a large non stick pan brown the turkey. As it cooks mix together the oil, syrup, Bragg & vinegar. Once browned add in onion, garlic & ginger. Once fragrant add in carrots, peppers& green onion & the dressing. Cover & let cook on medium until the carrots are softened. Clean the lettuce head and carefully pull off the leaves and place them open in plates. Dish the turkey mixture into the leaves & serve! The kids had a hoot rolling their wraps up & eating them!
