We love Friday night Pizza at our house. But instead of getting take-out we enjoy making our own. That way we save on the budget and can load it up with all sorts of veggies and great ingredients! I also like to pair it with a yummy salad to bump up my veggies! I made this one last Friday night and remembered how much I LOVE a warm spinach salad!
Warm spinach salad with capers & mushrooms: serves 2
1T olive oil
1/2 onion slices finely
1C sliced mushrooms
3T capers
3T apple cider vinegar
1t maple syrup
3C spinach
S&P
Garlic powder
Sauté the onions in the olive oil on medium heat. Add in the mushrooms once the onions are transparent. Season with S&P and garlic powder. Cook. Add in 3T capers with juice and 3T apple cider vinegar & 1 t maple syrup. Turn off the heat and toss spinach in warmed mixture.
